Parmesan Crusted Asparagus
I don’t know why, but asparagus always feels so fancy to me. If we are cooking a fancy steak or roasting something special, I always buy asparagus. Poorly cooked asparagus is still okay, but when it is really well cooked, it is incredible. You could really just roast them with some salt and olive oil, but this parmesan coating just kicks it up a notch. It’s super easy and you don’t have to pay any special attention to it. Give them a try!
Parmesan Crusted Asparagus
Ingredients
1 bunch of asparagus (ends trimmed off)
about 1/4 cup olive oil or grapeseed oil
1/4 cup fresh parmesan
1 teaspoon garlic powder
few dashes of salt
few dashes of white pepper
Directions
Lay the asparagus out on a foil lined or parchment paper lined baking sheet. You don’t have to use foil but I don’t like dishes! I am trying to transition to using parchment paper as it is much better for the environment.
Pour the oil over the top of the asparagus and use your fingers to toss to ensure everything is coated well.
Top with the parmesan, salt, pepper and garlic powder.
Bake on 375 degrees F for 20 minutes or until nice and crispy. Be sure that when you pull them from the oven you scrape off all of the yummy fried parmesan crisps and sprinkle back on top of the asparagus! YUM!
