Salty Dill Pickles
I love pickles. I’d rather have a salty snack over sweet any day. Ever since I was a kid, I always loaded up on pickles at sandwich shops, BBQ joints, etc. Pickles are a fun, healthy and yummy snack. Turns out they are easy to make as well!
Salty Dill Pickles
Ingredients:
2 cucumbers (about 1 pound)
1 cup white vinegar
1 cup water
2 teaspoons black peppercorns
2 teaspoons whole mustard seeds
3 sprigs fresh dill
1 teaspoon red pepper flakes
1 tablespoon sea salt
Equipment:
2 glass pint jars
Mandoline Sliver
Directions:
Slice cucumbers to desired thickness using a mandoline slicer. (I prefer medium thickness) Fill slices into the glass jars.
Combine the vinegar, water, and all spices in a small sauce pan. Bring to a simmer and then pull off heat.
Pour the liquid over the cucumbers in the jars. Let the mixture rest for at least 30 minutes before using. The pickles should keep in the fridge for a month or two.
