Elote
Elote is like a popsicle for adults. First you grill the corn and then top with a creamy, salty and spicy mixture. I have made it several times in the past few weeks because it’s just so yummy and can serve as a snack on its own or a great side to chicken, steak, burgers, etc.
Ingredients:
6 ears of corn, shucked
olive oil
1/2 cup mayo
1/2 cup sour cream
1 tablespoon chili powder, plus more for topping
few dashes of cayenne pepper
dash of salt
1/2 cup cotija cheese (queso fresco would also work) plus more for topping
teaspoon of lime juice
Directions:
Drizzle a bit of olive oil on the corn and cook directly on a grill pan or grill. It should take about 10-15 minutes constantly turning the corn so that it doesn’t burn but develops some nice grill marks.
Meanwhile, mix the mayo, sour cream, lime juice, spices and cheese. Once the corn is done, pour the sauce over the corn and then top with more cotija cheese and chili powder. Feel free to garnish with cilantro but I didn’t have any. You’ll be coming back for seconds!
