Fresh Basil Pesto
A good pesto is one of my favorite flavors. It’s fresh, salty and the oil gives it a great mouth feel. I have lots of basil in my garden so I make pesto whenever it is time to harvest. One thing you may not know about a basil plant is that it must be pruned for it to keep growing. Cutting back the basil leaves actually encourages the plant to continue becoming bushier and bigger. This pesto recipe also freezes well so I often double the recipe and freeze half. Enjoy!
Ingredients:
2 cups fresh basil leaves
4 garlic cloves
1/4 cup pine nuts
2/3 cup high quality EVOO
1/2 cup parmesan romano cheese
salt and pepper to taste
Directions:
Combine all ingredients into a blender while reserving half of the olive oil.
Turn the blender on, gradually adding the rest of the olive oil.
Salt and pepper to taste!
