Keto & Low Carb Green Chile Enchilada Casserole

This is one of my favorite low carb comfort foods EVER. I keep this recipe around for whenever we’ve had a long day and want something flavorful, healthy and requires minimal effort. It’s SO yummy. If you want something really spicy, go ahead and buy a spicier salsa. Enjoy!

Green Chile Enchilada Casserole

Ingredients:

  • Shredded Chicken from 1 rotisserie chicken (about 4-5 cups)

  • 1 - 16 oz. bag of frozen cauliflower

  • 1 cup sour cream

  • 1/4 cup shredded Monterrey Jack cheese

  • 1 Jar of quality Salsa Verde

  • Salt and Pepper to taste

Directions:

  1. Mix all ingredients in a large glass bowl. Add to a medium sized covered casserole dish. top with a bit more cheese.

  2. Cover and bake for 30 minutes on 400 degrees F and then remove the lid and cook for an additional 10 minutes.
