Hot and Spicy Macadamia Nuts

I love snacks foods. Especially if they are salty and spicy. I love a good spicy nut mix. I’ve never really liked macadamia nuts because the texture is soft and I don’t find the flavor appetizing. So, I did what I do best and covered it in butter and spicy seasonings. These are a great, healthy snack if you are on a keto diet or not. It is a great for a snack bowl at a party or to munch on while watching a movie. You could sub pretty much any nut into this recipe and it would be just as great. If you have raw, unroasted nuts, just pop them into an oven beforehand for 20 minutes.

Ingredients:

  • 1 pound roasted, unsalted macadamia nuts

  • 1 tablespoon salt

  • 1 teaspoon cayenne pepper

  • 1 teaspoon paprika

  • 1 teaspoon chili powder

  • 1/2 teaspoon cumin

  • 1/4 teaspoon garlic powder

  • Juice from a half of a lemon

  • 3 tablespoons unsalted butter

Directions:

  1. Heat the macadamia nuts in a large saucepan over medium heat for a few minutes until you start to see some minor browning on the nuts.

  2. Add in the unsalted butter and stir so that you coat all of the nuts in the butter.

  3. Combine all spices, mix with a spoon and then sprinkle all of the spice mixture over the nuts. Stir constantly so that the spices are evenly distributed. Continue to cook on medium until you stop hearing a sizzle. This means that the rest of the liquid has evaporated.

  4. Squeeze the half of a lemon over the top of the nuts and stir to combine. Remove the nuts from the heat and place in a single layer on paper towels. Let cool for 15-20 minutes and enjoy!
