Quick & Easy Bruschetta Dip

 

I love bruschetta. It is such a good party food because everyone loves it. The only problem is that the bread usually gets soggy when you prep too far ahead of time. I also don’t want to be constantly stacking and refilling snacks during a party. I started to make this is a dip so that people can serve how they prefer and at their leisure with no impact on the crispiness of the toasted bread. I present to you….bruschetta dip!

Ingredients:

  • 2 pints cherry tomatoes, quartered

  • 2 balls of fresh mozzarella, diced

  • 1/2 teaspoon garlic salt

  • 1/2 teaspoon pepper

  • 1/2 cup of sliced fresh basil

  • 1/2-3/4 cup of extra virgin olive oil

  • 2 tablespoons balsamic vinegar

  • 1 fresh baguette, sliced and toasted

Directions

  1. Quarter the cherry tomatoes and pop into a square baking dish.

  2. Add in the mozzarella, basil and all seasonings. Mix to combine.

  3. Top with extra virgin olive oil and balsamic vinegar and toss to combine.

  4. Let sit in the fridge for at least 30 minutes to meld the flavors together. You could also bake this dish at this point if you’d like, but I prefer it to be cold!

  5. Serve with plenty of toasted bread. Enjoy!
