Apple & Peach Galettes
A galette is basically a free form pie - there’s no pie dish. I like this alternative because it’s more rustic, easier to slice and more shareable. These are so simple to make and always look like it took a ton of time. You could fill the inside with any type of fruit, but I chose peaches and apples because they were requests from my mom. I ended up just using store bought pie dough because I was out in the hill country without my normal appliances, but you could also whip up some fresh dough. You’ve got to try this out - TRUST ME!
Apple and Peach Galettes (The below makes 1 galette. If you want to make both an apple and a peach, you will need to make this twice.)
Ingredients:
3 apples or peaches, cored and sliced evenly. (I used a microplane)
4 tablespoons sugar, plus a tad more for dusting
2 teaspoons cinnamon, plus a tad more for dusting
1 tablespoon flour
2 tablespoons butter, diced into little cubes
1 prepared pie crust
1 egg, beaten
Directions:
Mix the fruit, sugar, cinnamon, flour and butter in a small bowl.
Grease a baking sheet with a little butter or spray oil. Spread out the pie dough on the baking sheet, add the filling and then fold the edges of the dough about 1 -2 inches over the filling. Sprinkle with a bit more of sugar and cinnamon. Use the beaten egg as an egg wash and brush on the crust.
Bake on 425 degrees F for about 15-20 minutes. Let rest 3-5 minutes before serving.
