Citrus Salad with Lemon Vinaigrette

 

Salads are such an easy vessel to try new flavors and fruits/ veggies. I’ll see something at the grocery store like a pomegranate and decide to shape a salad around it. Today, I had the idea of serving a salad with grapefruit that had a tangy lemon vinaigrette. The grapefruit crossed with lemon and then cut with some feta cheese would be a fantastic side dish for something heavy like a steak or served on its own for a light lunch.

If you prefer kale, you could sub that for the mixed greens that I used. If you don’t have feta, you can easily sub Cotija cheese or even queso Fresca.

I served this alongside a steak and it was the perfect thing to counter balance a heavy steak. It is fresh, light and so yummy. Plus, every element of this salad is incredibly easy to prepare. Give it a try!

Lemon Vinaigrette

Ingredients:

  • 1/4 cup olive oil

  • 6 tablespoons lemon juice or more to taste

  • 1 tablespoon chopped Rosemary

  • salt and pepper to taste

Directions:

  1. Combine all ingredients in a mason jar and shake vigorously to emulsify. Season with salt and pepper to taste.

Citrus Salad

Ingredients:

  • Mixed Greens

  • Feta or Cotija Cheese

  • sliced Grapefruit

  • Lemon vinaigrette

Directions:

  1. Combine all ingredients and add in dressing. Toss to combine.
