I am going to say it…. I think that my chili recipe is the best in the world. It’s a simple recipe, with deep, complex flavors. It’s the best! #NotSorry. Chili is such a comforting, home-y meal to me. I love to whip up a batch when the leaves start to turn brown and football season comes back. I especially love to curl up with a bowl of chili when it’s a cold day outside.
I’ve heard a million people tell me that I am a bad Texan because I add beans to my chili….I don’t care. I love beans in chili. If you don’t like beans in chili, here’s a great recipe you need to see.
I’ve actually quadrupled this recipe for preparation over an outdoor fire pit, and it was a blast and SO tasty. Most of the time, I’ll make this recipe just for me and my husband, and we’ll enjoy the leftovers for a few days. Chili is also easy to make ahead and reheat if you are preparing for a gathering or maybe a Super Bowl party. You can get the hard work out of the way a few days beforehand, then toss it in a big dutch oven to reheat before friends, family and the other freeloaders arrive!
Moore Food Chili
Ingredients:
4 pounds ground beef
2 tablespoons canola oil
4 garlic cloves, minced
15 oz can tomato sauce
1/2 cup chili powder
1/2 cup dark chili powder
1 tablespoon onion powder
1 tablespoon paprika
1 teaspoon cayenne pepper
1 packet chicken goya seasoning
3 tablespoons salt
2 - 32 oz cartons low sodium chicken broth
1 shot of espresso
1-2 oz of dark chocolate, shredded or chopped
5 dashes hot sauce of choice
27 oz can pinto beans, drained
27 oz can red kidney beans, drained
3 dashes fish sauce
To serve: sour cream, corn chips, diced onion, avocado, cheese, hot sauce
Directions:
Add oil to a large dutch oven over medium and then toss in the beef and minced garlic. Cook until browned all the way through.
Add all spices and tomato sauce. Stir for about a minute to bloom the spices and then add in the chicken broth. Bring to a simmer and cook for 45 minutes until reduced by about a third.
Add in the beans, chocolate and espresso. Simmer for an additional 30 minutes. Then dash in the fish sauce and stir to finish.
Serve with sour cream, corn chips, diced onion, avocado, cheese, hot sauce.
